taco sundays.

our household has been one dreary, whining blur. sadly, the girls are still pretty down and out. their poor little faces are so sad looking. red. swollen.

being sick always comes at the worst (worse? worst? mom, which is it?) of times, don't you think? first of all, it's always bad timing to be sick because we obviously don't like to be sick at all. but around here, timing couldn't be more off. we had something awesome planned every day this weekend (which usually doesn't happen). so the husband and i have been tag-teaming our responsibilities. yesterday, i was able to attend the sweetest little boy's first birthday. big ben is literally, getting so big, and he's so super smart. i can't believe how stinkin' cute he is! then again, i can because his parents are just as cute.

okay, so today, jacob was able to visit a church to attend a buddy's baptism. which, i was very much looking forward to going to, but...didn't happen. it was even jacob's idea to bring the camera to take pictures (that was a proud moment), but then he forgot it. sad. he even got to go up front to witness first hand his buddy being baptized by his wife and then his wife being baptized by him. how cool, huh? jacob works with this friend, and it is just like that where he works. the guys are all pretty close, sharing in personal experiences outside of the work place. something you don't find too often and something we will most definitely miss in the next few months.

sundays are our day of eating pretty much what we want. within reason, right? anywho, we always make tacos on sunday and i have been meaning to share the secret sauce, that's really not much of a secret, that goes into the taco meat. these tacos are uber famous (passed on from my cookin' mama). as in, i would totally serve them to the queen of england, or president obama, if i had the chance. and on paper plates. they aren't the same any other way.la victoria is one brilliant woman. we usually use a bit of mild and medium to get the right mixture in spice. i like to add a little hot to mine for an extra kick. you want the meat to be pretty saucy and chopped up really small for just the right consistency. the salad portion is just lettuce and diced fresh tomato.i always thought my mom did something really special to the salad. the other secret? salt and pepper. yup, that simple. mix together and you've got a brilliantly vibrant bowl of simple salad. chop up a red onion. fry your white corn tortillas in canola oil and you've got the best tacos in the universe. your mouth will thank you for the fried goodness by doing a taco happy dance.
