national pancake day. what a wonderful time to bring out the camera and capture something we might too soon forget. i was super excited to make this a fun-family-filled evening. and to say the least, the previous hours of my day had been quite challenging. i was ready to make up for some sour moments and turn them into sweet memories. well...my attempt at pancakes (for the first time, i might add), had a different idea. here are the results of my first attempt. note to self: don't try to make pancakes with waffle mix. burnt on the outside, slimy on the inside.
i was determined to still have some happy memories of this all-important "holiday." with some help from my expert waffle-making-husband, we had some laughs and ended up with a quite tasty meal. since blueberries were already added to the mix, we ended up with blueberry waffles...that were surprisingly wonderful! watch out IHOP!
